Helpful tools
You won’t need a stand mixer or anything fancy for this recipe, as all you need is a simple mixing bowl and a spoon. Having a scale helps but is not necessary.

I love this pan because it is longer than the standard loaf pan. Resulting in smaller slices that are perfect for sandwiches for the kids!

Ingredients
- 120 grams bubbly sourdough starter (1/2 cup)
- 2 cups warm water
- 480 grams All Purpose flour (4 cups)
- 2Tbs Honey
- 2 tsp salt
Method
- Measure active starter and water to a bowl. Mix together and allow to sit for 5-10 minutes.
- Add in flour, honey, and salt. Mix well. The resulting dough will be very loose.
- Bulk rise for 12 hours at room temperature. The dough should double in size and be very bubbly.
- Using two forks gently pull the dough from the sides of the bowl to the center, working your way all the way around the bowl.
- Butter a loaf pan
- Gently transfer the dough to the pan and spread evenly.
- Allow dough to rise again for 1-2 hours. You’ll know it’s time to bake when the dough has risen to the edge of the pan.
- Preheat oven to 425 degrees.
- Bake for 30-35 minutes.
- Butter the top of the loaf immediately out of the oven.
- Allow to cool before slicing.
Tips
Active starter- using a sourdough starter that has been fed recently and at room temperature will yield better results.
Dough consistency- The texture of the dough after mixing everything together will be very loose. When it’s done with the bulk rise it will have a very thick “quick bread” like texture. Trust the process!
